INGREDIENTS
- 2 pounds any big fish slices, washed
- 2/3 cup olive oil
- 1 onion, sliced
- 2 tablespoons cognac
- ½ cup white wine
- 3 tomatoes, peeled and chopped
- 2 garlic cloves
- One lemon zest
- Parsley, chopped for garnish
- Salt and pepper
- Flour to coat fish slices
- Oil for frying
DIRECTIONS
- Preheat the oven to 350 degrees F.
- Season fish slices with salt and pepper. Lightly dip in flour to coat. Fry fish slices at medium high heat. When golden, remove to a baking dish (do not over fry as the fish will continue cooking in the oven).
- Heat the olive oil in a pot and sauté onion until translucent. Add all the remaining ingredients and let the sauce cook for 30 minutes over medium heat.
- Pour the sauce over fried fish slices. Bake in the oven for 40 minutes. Sprinkle with chopped parsley.
Romama’s Note: Serve the Fish in Tomato Sauce with boiled potatoes or rice!
