Fish in Tomato Sauce

INGREDIENTS

  • 2 pounds any big fish slices, washed
  • 2/3 cup olive oil
  • 1 onion, sliced
  • 2 tablespoons cognac
  • ½ cup white wine
  • 3 tomatoes, peeled and chopped
  • 2 garlic cloves
  • One lemon zest
  • Parsley, chopped for garnish
  • Salt and pepper
  • Flour to coat fish slices
  • Oil for frying

DIRECTIONS

  1. Preheat the oven to 350 degrees F.
  2. Season fish slices with salt and pepper. Lightly dip in flour to coat. Fry fish slices at medium high heat. When golden, remove to a baking dish (do not over fry as the fish will continue cooking in the oven).
  3. Heat the olive oil in a pot and sauté onion until translucent. Add all the remaining ingredients and let the sauce cook for 30 minutes over medium heat.
  4. Pour the sauce over fried fish slices. Bake in the oven for 40 minutes. Sprinkle with chopped parsley.

Romama’s Note: Serve the Fish in Tomato Sauce with boiled potatoes or rice!
