INGREDIENTS
- 1 ounce sugar
- ½ ounce of corn flour
- 4 cups of fresh pitted cherries
- 6 ounces of butter, cut into ½ inch cubes
- ½ cup sugar
- 2 ounces of brown sugar
- 2 ounces of almonds, ground blanched
- 1 orange – fresh juice of one orange
DIRECTIONS
- Well butter a 1 liter baking dish and preheat the oven to 400 degrees °F.
- In a sauce pan – add sugar and corn flour. Add cherries and mix to coat with the sugar – corn flour mixture. Start cooking cherries over low heat until softened. Add sugar and orange juice while stirring occasionally until the mixture thickens. Pour into the baking dish.
- In a bowl – sift flour, add butter, and rub with your fingertips to blend. Add brown sugar and the ground blanched almonds.
- Spoon the crumb mixture evenly over the top. Bake for 20-30 minutes until the top is golden brown and crunchy. Remove from the oven and let rest for 10 minutes.
Romama’s Note: You can serve the Almond Crumb Cherry Pie warm or cold with vanilla ice cream or whipped cream on top for additional taste!
