Oven Fried Chicken Breasts (a kid’s favorite)

INGREDIENTS

  • 4 boneless, skinless chicken breasts, cut lengthwise into halves
  • 2 cups plain breadcrumbs (add sesame seeds)
  • 2 cups Greek yogurt
  • Salt and pepper
  • ¼ cup olive oil










DIRECTIONS

  1. Sprinkle chicken breasts with salt and pepper.
  2. Dip each chicken piece into the yogurt and dredge into the breadcrumbs patting to coat thickly.
  3. Lay parchment paper on a baking sheet and arrange the chicken breasts.
  4. Heat the olive oil in a small sauce pan until smoking and pour ½ tablespoon hot oil over each chicken breast.
  5. Bake on the lower shelf of the over for 30 minutes to 400 degrees F until golden brown and crisp.
