INGREDIENTS
- 4 boneless, skinless chicken breasts, cut lengthwise into halves
- 2 cups plain breadcrumbs (add sesame seeds)
- 2 cups Greek yogurt
- Salt and pepper
- ¼ cup olive oil
DIRECTIONS
- Sprinkle chicken breasts with salt and pepper.
- Dip each chicken piece into the yogurt and dredge into the breadcrumbs patting to coat thickly.
- Lay parchment paper on a baking sheet and arrange the chicken breasts.
- Heat the olive oil in a small sauce pan until smoking and pour ½ tablespoon hot oil over each chicken breast.
- Bake on the lower shelf of the over for 30 minutes to 400 degrees F until golden brown and crisp.
