INGREDIENTS
- 3 chicken breasts, skinless, halved
- 6 tablespoons olive oil
- 12 bacon slices
- 2 medium sized potatoes, peeled and sliced (¼ inch thick)
- Salt – pepper – oregano leaves
- Parchment paper, 6 pieces 15 by 16 inches
- Olive oil for brushing
DIRECTIONS
- Preheat the oven to 350 degrees F
- Fold each parchment paper piece in half and brush with olive oil. Place one potato slice in the center and top with one chicken breast wrapped with 2 bacon slices. Season with salt and pepper. Sprinkle with oregano leaves. Pour 1 tablespoon of olive oil over each chicken breast.
- Close by folding parchment over chicken; make overlapping pleats to seal the open sides and create a half-moon packet. Place on a baking sheet and bake for 30 minutes. Open the packets and bake for 20 minutes longer until golden brown.
